Also, the grated cheese that is used on each meal depends on what we catch on sale at the market. The best cheese as far as I'm concerned is that of Pecorino-Romano. And, on the end, I prefer to buy the brick and grate it myself because you tend to get a better quality of cheese and one that is fresher and has a unique flavoring taste. Enjoy,
